Knife Skills: How to Supreme an Orange

One of the most important skills in the kitchen is how to use a knife. Each week, we introduce the skills necessary to accomplish 1 task in a cleaner, more efficient way. Today we focus on knife skills to supreme an orange.

Do you know how to supreme an orange? It’s super fancy, and also super impressive. Basically supremes are the orange fruit without the membrane. (Orange membranes are those white skin-like material that separates the orange segments.) If you want to really show off, learning how to supreme an orange is a skill you should master!

You’ll need to start with a peeled orange. And of course a clean cutting board, paring knife and towel

Step by Step Instructions on How to Supreme an Orange

Step 1: Using a paring knife, gently slice along the membrane until you reach the center of the orange. The membrane is the transparent covering that holds all of the orange bits together. You’ll see it as white ridges along the outside of the organe.

Step 2: Rotate your knife about 45 degrees and push out the orange fruit by scraping your knife against the membrane.

Step 3: Move your knife to the other side of the membrane (the one with the fruit still attached) and slice against the membrane, until you reach the center.

Step 4: Rotate and scrape. Continue doing so until you have completed the entire orange.

When you’re done, you’ll have some beautiful, elegant orange supremes and a circle of empty membranes. And now you can impress everyone with your mad knowledge on how to supreme and orange.
